Boil Eggs: Place eggs in a pot, cover with water, and bring to a boil. Turn off heat, cover, and let sit for 10–12 minutes.
Cool and Peel: Transfer eggs to ice water, then peel and chop.
Mix Base: In a mixing bowl, stir together mayonnaise, mustard, and seasonings.
Add Veggies: Mix in chopped celery and green onions.
Add Eggs: Gently fold in the chopped eggs.
Chill and Season: Refrigerate for at least 30 minutes to develop flavor.
Serve: Spoon onto bread, croissants, or lettuce cups. Sprinkle with paprika or dill.
