– 1 large cucumber, diced – 2 cups cherry or grape tomatoes, halved – 2 ripe avocados, diced – ¼ red onion, thinly sliced – 2 tbsp olive oil – 1 tbsp fresh lemon juice or vinegar – Salt and black pepper to taste

Ingredients
– Prep vegetables and place them in a large salad bowl. –
Add avocados last to prevent early browning.
In a small bowl, whisk together olive oil and lemon juice.
Pour dressing over salad ingredients.
Season with salt and pepper to taste.
Gently toss the salad so avocados stay intact.
Chill for 10–15 minutes before serving for better flavor.
