Lemon Blueberry Layer Cake

– 2 ½ cups all-purpose flour – 2 tsp baking powder – ½ tsp salt – 1 cup unsalted butter, softened – 1 ½ cups sugar – 4 eggs – 1 tbsp lemon zest – 1 tsp vanilla extract – ½ cup milk – 2 cups fresh or frozen blueberries – Lemon cream cheese frosting (homemade or store-bought)

Step 1

Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Step 2

Whisk dry ingredients: Combine flour, baking powder, and salt in a bowl.

Step 3

Cream butter and sugar: Beat butter and sugar until light and fluffy.

Step 4

Add eggs one at a time, then stir in lemon zest and vanilla.

Step 5

Alternate adding milk and flour mixture, mixing until just combined.

Step 6

Fold in blueberries with a spatula to avoid breaking them.

Step 7

1. Divide batter into pans, bake for 25–30 minutes. Cool and frost between layers and on top.
